I'm sure you're right, that he'd be very confused and angry at first (who wouldn't be?). But I think the fact that she killed L right after would make the 'I love you' a lie, and given time, he might realize that. He might not, I agree, but it could help him to guess some of the psychological pressure she was under those months. As it stands though, unless she tells him about how Leoben was trying to break her, there's not much for Sam to go on.
