Meant to post this earlier, and got distracted by running around and packing and making a 'toaster bait' t-shirt. OMG. It has a toaster on it!
Anyway. Random crap to do with cooking.
Have you ever had an accident with pepper? I'm asking, as I was reminded tonight of making dinner several weeks ago.
Picture this: I'm putting various spices on chicken breasts, slated for the oven. I pick up the pepper and pop open the thingie (breaking a nail in the process) and shake hard, since I like lots of pepper.
Unfortunately for me, I'd opened the wrong flap, and a large quantity of pepper cascades down, drowning the chicken breast and making me laugh. Luckily, there wasn't too much, but I did end up with REALLY peppery chicken for dinner that night.
In a similar vein, since I was in the mood for recipe-ing.
Lyssie's OMG I only have one chicken breast and don't know what to make for dinner, ARGH! Recipe
Requirements:
1 chicken breast (if frozen, thawed).
1 large onion or 2 small ones (if you like onions, 2 medium-sized)
Half a bag of frozen broccoli (about two cups? Or so, if you've got a larger bag, or are using fresh)
Oil
Pepper, italian spice, garlic powder, seasoning salt (any of these are optional).
1 largish skillet (if there's a top for it, all the better).
Cut the chicken into small pieces (bite-size). Put oil in the skillet (enough to coat the bottom), dump in the chicken and add dashes of each of the spices (lots of pepper is good. Mmm). Cook on medium heat until starting to brown (this is not an exact process, I routinely almost-burn it). Chop the onion and add it. When the onion is starting to go translucent, add the broccoli. If you have a lid, turn it lower and pop the lid on. Basically, it should all be kinda mushy-looking, at this point. Cook until the broccoli is warmed/steamed.
Serves 2-3.
Serve with: rice, pasta, mashed potatoes, whatever.
The recipe can be varied, you can add carrots, peas, corn or cauliflower. I don't recommend adding squash. OR cinnamon.
