Hungry. Fooded. This is good. I shall now spread the food.
Lyssie's I Love! Tomatoes Nachos.
1 can of (dicey) stewed tomatoes -- preferably something mild, intended for Chili.
White corn chips.
Sharp Cheddar Cheese.
Fill a plate with the corn chips. This works best if there are several layers, and they're sort of crunched up. (I used Schnucks' Bite-Size White corn, which aren't really bite size...). Open tomatoes, and using a fork, plop out tomatoes all over the chips. You can save the juice for chili, if you want, pour it over, or just dump it away. Grate cheese over plate--try to actually get it ON the tomatoes, not on the counter--until you've got as much as you want.
Place in microwave, nuke for 2-3 minutes (check and make sure the cheese is melted). Let sit for a minute (dude! Hot plate!). Eat. Either by hand, or with a fork.
